2 cups cooked chicken, shredded

1/2 cup buffalo sauce

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/4 cup green onions, chopped

12 egg roll wrappers

1 egg, beaten (for sealing)

Oil for frying

Cilantro leaves for garnish (optional)

Instructions
 

In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, shredded cheddar cheese, and chopped green onions. Mix well until all ingredients are thoroughly combined.

    Lay out an egg roll wrapper on a clean surface, angled so it looks like a diamond shape. Place about 2 tablespoons of the chicken mixture in the center of the wrapper.

      Fold the bottom corner of the wrapper over the filling, then fold the sides inward, securing the filling. Roll the wrapper tightly, sealing the top corner with a bit of the beaten egg to ensure it stays closed. Repeat with remaining wrappers and filling.

        Heat oil in a deep skillet over medium heat. Once hot, carefully add a few egg rolls at a time, frying until golden and crispy on all sides—about 3-4 minutes. Remove and drain on paper towels.
