Ingredients
  

2 cups cooked shredded chicken

1/2 cup buffalo sauce (adjust to taste)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/4 cup green onions, finely chopped

12 egg roll wrappers

Oil for frying (vegetable or canola)

Ranch or blue cheese dressing (for dipping)

Instructions
 

In a mixing bowl, combine the shredded chicken, buffalo sauce, shredded cheddar cheese, cream cheese, and chopped green onions. Mix until well blended.

    Lay an egg roll wrapper on a clean surface, with a corner pointing towards you.

      Spoon about 2 tablespoons of the chicken mixture onto the bottom half of the wrapper.

        Fold the bottom corner over the filling, then fold in the sides and roll tightly towards the top corner. Seal the edge with a bit of water. Repeat with remaining wrappers and filling.

          Heat about an inch of oil in a frying pan over medium heat.

            Once hot, carefully place a few egg rolls in the oil (do not overcrowd) and fry until golden brown, about 2–3 minutes on each side.

              Remove the egg rolls from the oil and place them on paper towels to drain excess oil.

                Serve hot with ranch or blue cheese dressing for dipping.
