Buffalo Chicken Enchiladas

2 cups cooked shredded chicken

1/2 cup buffalo sauce (adjust to taste)

1 cup cream cheese, softened

1 cup shredded cheddar cheese, plus additional for topping

1/2 cup green onions, chopped (divided)

8 small flour tortillas

1 can (10 oz) red enchilada sauce

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Mix Chicken Filling: In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, 1 cup of cheddar cheese, and half of the chopped green onions. Mix until well combined. Season with salt and pepper to taste.

      Prepare Tortillas: Warm the tortillas in a hot skillet for about 10-15 seconds on each side to make them pliable.

        Fill Tortillas: Spread about 1/4 cup of the chicken mixture onto the center of each tortilla. Roll them up tightly and place them seam-side down in a greased 9x13 inch baking dish.

          Add Enchilada Sauce: Pour the red enchilada sauce evenly over the rolled tortillas. Ensure that they are well covered.

            Top with Cheese: Sprinkle any remaining cheddar cheese and a bit more chopped green onions over the top of the enchiladas.

              Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro and additional green onions if desired before serving.
