4 large bell peppers (red, yellow, or green)

2 cups cooked rotisserie chicken, shredded

1/2 cup buffalo sauce (adjust to taste)

1/2 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup crumbled blue cheese (optional)

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh cilantro or green onions for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.

      In a large mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, cheddar cheese, blue cheese (if using), garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are fully combined and creamy.

        Carefully spoon the buffalo chicken mixture into each bell pepper, packing them tightly and filling them to the top.

          Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes.

            After 25 minutes, remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the tops are bubbly.

              Carefully remove from the oven and let them cool for a few minutes.

                Garnish with freshly chopped cilantro or green onions before serving.
