1 large crusty baguette

200g fresh burrata cheese

1 cup cherry tomatoes, halved

1/4 cup fresh basil leaves, roughly chopped

2 cloves garlic, minced

3 tablespoons extra virgin olive oil

1 tablespoon balsamic glaze

Salt and pepper to taste

Optional: 1/4 teaspoon chili flakes for a kick

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baguette: Slice the baguette into 1-inch thick slices. Arrange them on a baking sheet.

      Toast the Bread: Drizzle the slices with 1 tablespoon of olive oil, and sprinkle with a pinch of salt. Toast in the preheated oven for about 5-7 minutes or until golden and crispy. Remove and let cool slightly.

        Make the Topping: In a bowl, combine the halved cherry tomatoes, minced garlic, chopped basil, the remaining olive oil (2 tablespoons), and season with salt, pepper, and chili flakes if desired. Toss gently to mix everything.

          Assemble the Bruschetta: Top each toasted baguette slice with a generous spoonful of the tomato mixture.

            Add Burrata: Cut the burrata cheese in half and place a piece on top of each bruschetta.

              Drizzle and Serve: Finish with a drizzle of balsamic glaze over the top.
