Ingredients

1 loaf of rustic Italian bread (such as ciabatta or baguette)

2 cups cherry tomatoes, halved

1 ball of burrata cheese (about 8 oz)

3 tablespoons balsamic glaze

2 tablespoons extra virgin olive oil

1 garlic clove, halved

1/4 cup fresh basil leaves, chopped

Salt and freshly cracked black pepper to taste

Instructions

Preheat your oven to 400°F (200°C).

Slice the Italian bread into 1-inch thick pieces and place them on a baking sheet.

Drizzle the bread slices with 1 tablespoon of olive oil and toast in the oven for about 6-8 minutes, or until golden and crispy.

While the bread is toasting, prepare the tomato topping. In a medium bowl, combine the halved cherry tomatoes, chopped basil, remaining olive oil (1 tablespoon), and season with salt and pepper to taste. Gently mix and let it sit for a few minutes to allow the flavors to meld.

Once the bread is toasted, remove it from the oven, and while still warm, rub the cut side of the garlic clove over each slice for a hint of garlic flavor.

Top each slice of bread generously with the tomato-basil mixture.

Tear the burrata cheese and place pieces over the tomato topping on each bruschetta.

Drizzle with balsamic glaze for added flavor and a touch of sweetness.

Finish with an extra sprinkle of freshly cracked black pepper and a few basil leaves for garnish.
