Ingredients

4 slices of rustic bread (like ciabatta or sourdough)

1 cup cherry tomatoes, halved

1 ball of fresh burrata cheese

1 tablespoon balsamic glaze

Fresh basil leaves, for garnish

2 tablespoons extra virgin olive oil

Salt and freshly ground black pepper, to taste

1 clove of garlic, cut in half

Instructions

Preheat your oven to 400°F (200°C).

Place the slices of bread on a baking sheet and drizzle them with olive oil.

Toast the bread in the oven for about 8-10 minutes or until golden brown and crispy.

While the bread is toasting, assemble the cherry tomatoes in a bowl. Add a pinch of salt and a dash of olive oil. Toss gently to combine.

Once the bread is toasted, remove it from the oven and rub the cut side of the garlic clove on top of each slice for a hint of flavor.

Spoon the marinated cherry tomatoes evenly onto the toasted bread slices, making sure each slice has plenty of tomatoes.

Tear the burrata cheese with your hands and place a generous portion on top of the tomatoes on each slice.

Drizzle balsamic glaze over the top of each toast for added sweetness and depth.

Garnish with fresh basil leaves, and finish with a sprinkle of freshly ground black pepper.
