2 boneless, skinless chicken breasts

2 teaspoons taco seasoning

1 tablespoon olive oil

1 cup cooked brown rice

1 cup black beans, drained and rinsed

1 cup corn, frozen or fresh

1 cup cherry tomatoes, halved

1 avocado, diced

½ cup shredded cheddar cheese

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Optional toppings: sour cream, salsa, jalapeños

Instructions
 

Season the chicken breasts with taco seasoning, making sure to coat both sides evenly.

    Heat the olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let rest for 5 minutes, then slice into strips.

      In a large bowl, combine the cooked brown rice, black beans, corn, cherry tomatoes, diced avocado, and half of the chopped cilantro. Drizzle with lime juice and season with salt and pepper to taste. Toss gently to combine.

        To assemble the burrito bowls, divide the rice mixture evenly among 4 serving bowls. Top each bowl with sliced chicken, shredded cheddar cheese, and remaining cilantro.

          Add any optional toppings you desire, such as sour cream or salsa, to elevate the flavor of your bowl.
