8 oz egg noodles

2 boneless, skinless chicken breasts, cut into bite-sized pieces

3 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Zest of 1 lemon

Cook the Noodles: In a large pot, bring salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Prepare the Chicken: Season the chicken pieces with salt, pepper, dried thyme, and oregano.

      Cook the Chicken: In a large skillet, melt 1 tablespoon of butter over medium heat. Add the seasoned chicken pieces and cook for about 5-7 minutes or until they are golden brown and cooked through. Remove from the skillet and set aside.

        Sauté Aromatics: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and red pepper flakes (if using), sautéing for about 1-2 minutes until fragrant.

          Combine Noodles and Chicken: Return the cooked noodles and chicken to the skillet. Toss everything together, adding the reserved pasta water gradually to create a silky sauce.

            Finishing Touches: Stir in the grated Parmesan cheese and lemon zest. Mix well until the cheese is melted and everything is well combined. Adjust seasoning with salt and pepper as desired.

              Serve: Remove from heat, and garnish with fresh parsley before serving.
