Instructions
In a mixing bowl, combine warm water, sugar, and salt. Sprinkle the yeast on top and let it sit for about 5 minutes until frothy.
Add the melted butter and flour into the yeast mixture. Stir until a dough begins to form.
Knead the dough on a lightly floured surface for about 5-7 minutes, or until smooth and elastic.
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for approximately 1 hour, or until it has doubled in size.
Preheat the oven to 450°F (232°C) and line two baking sheets with parchment paper.
In a large pot, bring 10 cups of water and the baking soda to a boil.
Punch down the risen dough and divide it into small portions (about 12-16 pieces). Roll each piece into a rope and cut it into bite-sized pieces.
Carefully add the pretzel bites in batches to the boiling water for about 30 seconds. Remove them with a slotted spoon and place them on the prepared baking sheets.
Brush each pretzel bite with beaten egg and sprinkle with coarse sea salt.
Bake in the preheated oven for 12-15 minutes, or until golden brown.
Once baked, brush the pretzel bites with additional melted butter for extra flavor and richness.
Notes
Serve warm in a basket lined with parchment paper, with cheese sauce or mustard for dipping.
