4 lbs beef ribs

2 tablespoons olive oil

1 medium onion, chopped

4 cloves garlic, minced

2 cups beef broth

2 tablespoons balsamic vinegar

2 tablespoons brown sugar

2 teaspoons dried thyme

1 teaspoon smoked paprika

2 carrots, chopped

2 celery stalks, chopped

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preparation of the Ribs: Season the beef ribs generously with salt and pepper on all sides.

    Searing the Ribs: Heat olive oil in a large, heavy-bottomed pot over medium-high heat. Sear the beef ribs in batches until they develop a deep brown crust on all sides, about 3-4 minutes per side. Remove and set aside.

      Sauté the Aromatics: In the same pot, add the chopped onion and cook until translucent, about 3-5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

        Create the Braising Liquid: Pour in beef broth and add balsamic vinegar, brown sugar, dried thyme, and smoked paprika. Stir well, scraping up any brown bits from the bottom of the pot for extra flavor.

          Add Vegetables and Ribs: Return the seared beef ribs to the pot along with the chopped carrots and celery. Ensure the liquid covers the ribs about halfway.

            Braise the Ribs: Bring the mixture to a simmer, then cover the pot and reduce the heat to low. Let it braise gently for about 2.5 to 3 hours, or until the meat is fork-tender.
