Ingredients
  

1 head of romaine lettuce, chopped

1 cup cherry tomatoes, halved

1 cup canned chickpeas, rinsed and drained

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup grated Parmesan cheese (or vegan alternative)

1/4 cup Caesar dressing (store-bought or homemade)

Croutons (optional, for added crunch)

Instructions
 

Preheat your oven to 400°F (200°C).

    On a baking sheet, spread out the rinsed chickpeas evenly. Drizzle with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until evenly coated.

      Roast the chickpeas in the preheated oven for 20-25 minutes, or until golden and crispy, stirring halfway through.

        While the chickpeas are roasting, in a large bowl, combine the chopped romaine lettuce and halved cherry tomatoes.

          Once the chickpeas are done, let them cool slightly. Add them to the bowl with the lettuce and tomatoes.

            Drizzle the Caesar dressing over the salad and toss gently to combine all ingredients thoroughly.

              Sprinkle the grated Parmesan cheese on top and add croutons if desired. Toss again lightly.

                Serve immediately in large bowls or on individual plates garnished with extra Parmesan and a sprinkle of smoked paprika for color.
