2 salmon fillets (about 6 oz each)

8 oz shrimp, peeled and deveined

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 tablespoon butter

2 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth (low sodium)

1/2 cup cherry tomatoes, halved

1/3 cup green onions, chopped

Salt and pepper to taste

Season the Seafood: Pat the salmon fillets and shrimp dry with paper towels. Rub Cajun seasoning over both the salmon and shrimp evenly. Set aside for a few minutes to marinate.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Place the salmon in the skillet, skin-side down, and cook for about 4-5 minutes. Carefully flip and cook for another 3-4 minutes, until the salmon is cooked through and flakes easily with a fork. Remove from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add the butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp and cook for 2-3 minutes, until they turn pink and opaque. Remove the shrimp and set aside with the salmon.

        Prepare the Sauce: In the same skillet, pour in the chicken broth and let it simmer for 2 minutes to reduce slightly. Then, add the heavy cream and cherry tomatoes. Bring to a gentle boil, then reduce heat to medium-low, allowing the sauce to thicken for about 5-7 minutes. Stir occasionally.

          Combine: Return the salmon and shrimp to the skillet. Gently spoon the sauce over the seafood, cooking for an additional 2 minutes to heat everything through. Adjust seasoning with salt and pepper to taste.
