Cajun Potato Soup

4 large russet potatoes, peeled and diced

1 tablespoon olive oil

1 onion, diced

3 cloves garlic, minced

2 celery stalks, diced

1 bell pepper (red or green), diced

1 cup cooked and crumbled Andouille sausage (or plant-based sausage)

4 cups vegetable or chicken broth

1 teaspoon Cajun seasoning

1/2 teaspoon smoked paprika

1 cup heavy cream (or coconut cream for a dairy-free option)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and bell pepper. Sauté for about 5–7 minutes until the vegetables are softened.

    Add the minced garlic and sauté for an additional minute until fragrant.

      Stir in the diced potatoes and crumbled Andouille sausage, cooking for another 3 to 4 minutes to allow the flavors to meld.

        Pour in the vegetable or chicken broth and add the Cajun seasoning and smoked paprika. Bring to a boil, then reduce the heat and let simmer for 15–20 minutes, or until the potatoes are fork-tender.

          Once the potatoes are tender, use a potato masher to mash some of the potatoes in the pot, creating a creamy texture while still leaving some chunks.

            Stir in the heavy cream (or coconut cream) and allow the soup to heat through, stirring for about 5 more minutes.

              Taste and season with salt and pepper as needed.

                Remove from heat and let the soup cool slightly before serving.
