1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup ricotta cheese

½ cup mini chocolate chips

½ teaspoon ground cinnamon

1 cup powdered sugar (for frosting)

2 tablespoons heavy cream (or milk)

½ cup mascarpone cheese

Instructions
 

Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.

    In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.

      In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and ricotta cheese until combined.

          Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

            Fold in the mini chocolate chips and ground cinnamon gently with a spatula.

              Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.

                Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                  Once baked, remove from the oven and let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

                    Meanwhile, prepare the frosting: In a medium bowl, beat together the mascarpone cheese and powdered sugar until smooth. Gradually add the heavy cream until you reach your desired consistency.

                      Once the cupcakes are completely cooled, frost them generously with the mascarpone mixture.

                        Optionally, garnish with additional mini chocolate chips or a sprinkle of cinnamon on top for added flair.
