Ingredients

1 cup granulated sugar (for caramel)

1/4 cup water (for caramel)

1/2 cup sweetened condensed milk

1/2 cup evaporated milk

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 cup all-purpose flour

1/2 cup milk

Pinch of salt

Instructions

Prepare the Caramel: In a small saucepan over medium heat, combine the granulated sugar and water. Stir gently until the sugar dissolves, then let it cook without stirring until it turns a golden caramel color (about 5-7 minutes).

Caramelize Muffin Tin: Quickly pour the caramel into the bottom of a muffin tin (12 cups), swirling the tin to coat the bottoms evenly. Set aside to cool and harden.

Make the Flan Batter: In a blender, combine the sweetened condensed milk, evaporated milk, eggs, vanilla extract, baking powder, and salt. Blend until smooth and well combined.

Prepare the Muffin Mixture: In a separate bowl, mix the all-purpose flour and milk until just combined. Gradually pour the blended flan mixture into the flour mixture, gently folding until smooth and lump-free.

Fill Muffin Cups: Pour the flan batter over the set caramel in each muffin cup, filling them about 2/3 full.

Bake: Preheat the oven to 350°F (175°C) and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the muffins to cool in the tin for 10 minutes before inverting onto a serving plate. The caramel will drip down the sides, creating a beautiful glaze.
