2 pounds beef chuck, cut into 1.5-inch cubes

2 tablespoons olive oil

1 large onion, chopped

4 cloves garlic, minced

2 bell peppers (one red, one green), chopped

2 medium tomatoes, diced

2 cups beef broth

1 tablespoon ground cumin

1 tablespoon paprika

1 teaspoon dried oregano

1 teaspoon black pepper

Salt to taste

2 bay leaves

1 tablespoon tomato paste

2 medium carrots, sliced

1 cup frozen peas

Fresh cilantro, chopped (for garnish)

Instructions
 

In a large heavy pot or Dutch oven, heat the olive oil over medium-high heat.

    Add the beef cubes in batches, browning them on all sides. Remove the browned beef and set it aside.

      In the same pot, add the chopped onion and garlic. Sauté until softened, about 3–4 minutes.

        Stir in the bell peppers and diced tomatoes, cooking for another 5 minutes until the vegetables start to soften.

          Return the beef to the pot and add the beef broth, ensuring the meat is well covered.

            Stir in the ground cumin, paprika, oregano, black pepper, salt, bay leaves, and tomato paste, mixing thoroughly to combine.

              Add the sliced carrots and bring the mixture to a simmer.

                Cover the pot with a lid, reduce the heat to low, and let it cook gently for 2 to 2.5 hours, or until the beef is tender and easily shreds with a fork. Stir occasionally, adding more broth if the mixture gets too thick.

                  In the last 15 minutes of cooking, stir in the frozen peas.

                    Once cooked, remove the bay leaves and check for seasoning. Adjust salt and spices, if necessary.
