Carrot-Shaped Vegan Easter Brownies

1 cup cocoa powder

1 cup coconut sugar (or brown sugar)

1/2 cup unsweetened applesauce

1/2 cup almond milk (or any plant-based milk)

1/3 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon baking soda

1 cup finely grated carrots

Green vegan frosting (store-bought or homemade)

Edible green decorations (like sprinkles or edible glitter)

Instructions
 

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, letting some paper hang over the sides for easy removal.

    In a large mixing bowl, combine the flour, cocoa powder, coconut sugar, baking powder, baking soda, and salt. Whisk until well combined.

      In another bowl, mix together the grated carrots, applesauce, almond milk, melted coconut oil, and vanilla extract. Stir until fully integrated.

        Pour the wet ingredients into the dry ingredients. Gently mix until just combined, being careful not to overmix the batter.

          Pour the brownie mixture into the prepared baking pan and spread it evenly with a spatula.

            Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

              Once done, remove the brownies from the oven and let them cool in the pan for about 10 minutes. Then, lift the brownies out using the parchment paper and allow them to cool completely on a wire rack.

                After cooling, use a sharp knife to cut the brownies into carrot shapes—approximately small triangles or ovals that resemble carrots.

                  Frost the tops of the brownie carrots with green vegan frosting to resemble the tops of real carrots. You can use piping bags or simply spread the frosting with a knife.

                    For an added touch, sprinkle some edible green decorations on top to give it a fun festive look!
