1 medium head of cauliflower, riced

2 tablespoons olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 cup mixed vegetables (carrots, peas, corn)

2 eggs, lightly beaten

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

2 green onions, sliced

Salt and pepper to taste

Start by preparing the cauliflower. Remove the leaves and stem, then cut the cauliflower into florets. Using a food processor, pulse the florets until they resemble rice grains (about the size of a traditional grain of rice). Alternatively, you can finely chop it by hand.

    Heat the olive oil in a large skillet or wok over medium heat. Add the minced garlic and chopped onion, sautéing for about 2-3 minutes until fragrant and translucent.

      Stir in the mixed vegetables and cook for another 3-4 minutes until they are tender.

        Push the sautéed vegetables to one side of the skillet, then pour the beaten eggs into the empty space. Scramble the eggs until cooked through, then mix them with the vegetables.

          Add the riced cauliflower to the skillet, stirring well to combine with the other ingredients. Cook for about 5-7 minutes, stirring frequently until the cauliflower is tender but not mushy.

            Drizzle the soy sauce and sesame oil over the fried rice, mixing well. Season with salt and pepper to taste. Stir in the sliced green onions right before serving for a fresh hint of flavor.

              Remove from heat and serve immediately.
