Ingredients
  

1 medium head of cauliflower, riced (or 4 cups pre-riced cauliflower)

1 tablespoon olive oil

1 small red onion, diced

2 cloves garlic, minced

1 cup bell peppers (mixed colors), diced

1 cup cooked black beans (drained and rinsed)

1 avocado, sliced

1 tomato, diced

1 cup corn (fresh or frozen)

2 tablespoons lime juice

Salt and pepper to taste

Fresh cilantro, for garnish

Optional: 1 teaspoon chili powder for a bit of heat

Instructions
 

Begin by cutting the cauliflower into florets. If using a whole head, pulse the florets in a food processor until they resemble rice grains. Set aside.

    In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for about 2-3 minutes until they become translucent.

      Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.

        Stir in the riced cauliflower and bell peppers. Cook for around 5-7 minutes, stirring occasionally, until the cauliflower is tender and lightly golden.

          Mix in the cooked black beans and corn, cooking for another 2-3 minutes until everything is heated through. Season with lime juice, salt, pepper, and, if desired, chili powder.

            Once cooked, remove from heat and let cool slightly.

              To serve, create a base with the cauliflower mixture in individual bowls. Top each bowl with slices of avocado and diced tomatoes.

                Garnish with fresh cilantro for added flavor and color.
