1 medium celeriac (about 1 pound), peeled and diced

1 large apple (preferably a tart variety like Granny Smith), peeled and chopped

1 medium onion, finely chopped

2 cloves garlic, minced

3 cups vegetable broth

1 cup coconut milk

2 tablespoons olive oil

1 teaspoon thyme (fresh or dried)

Salt and pepper to taste

Juice of 1/2 lemon

Chopped chives or parsley for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.

    Add the minced garlic and cook for an additional minute until fragrant.

      Stir in the diced celeriac and chopped apple, sautéing for about 5-7 minutes until they start to soften.

        Pour in the vegetable broth, add thyme, and bring the mixture to a boil.

          Reduce the heat and let it simmer for about 20 minutes, or until the celeriac is tender.

            Using an immersion blender or a countertop blender, puree the soup until smooth.

              Stir in the coconut milk and lemon juice, then season with salt and pepper to taste.

                Heat the soup over low heat until warmed through, and adjust seasoning if necessary.
