Ingredients

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1 teaspoon vanilla extract

1 large egg

1 cup chocolate chips (semi-sweet or dark)

For the Cheesecake Filling:

8 oz cream cheese, softened

1/4 cup granulated sugar

1/2 teaspoon vanilla extract

1 egg yolk

Instructions

Prepare the Cheesecake Filling: In a medium bowl, combine softened cream cheese, 1/4 cup granulated sugar, 1/2 teaspoon vanilla extract, and egg yolk. Mix until smooth and creamy. Refrigerate the filling while preparing the cookie dough.

Make the Cookie Dough: In a separate bowl, whisk together the flour, baking soda, and salt. Set aside.

In a large mixing bowl, cream together the softened butter, 1/2 cup granulated sugar, and brown sugar until light and fluffy. Add in 1 teaspoon vanilla extract and the egg, mixing until well incorporated.

Gradually add the flour mixture to the wet ingredients, mixing just until combined. Fold in the chocolate chips.

Assemble the Cookies: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Using a cookie scoop (or tablespoon), take a small amount of cookie dough and flatten it slightly in your palm. Spoon about 1 teaspoon of the cheesecake filling into the center and fold the edges of the cookie dough around the filling, sealing it tightly. Place the filled cookie on the prepared baking sheet. Repeat with remaining dough and filling.

Bake the Cookies: Bake for 10-12 minutes, or until the cookies are lightly golden. Remove from the oven and allow to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Enjoy: Once cooled, bite into the warm gooey cookies and enjoy the delightful center of cheesecake filling.
