Ingredients

12 oz cheese tortellini

1 lb thinly sliced steak (ribeye or sirloin)

1 medium onion, thinly sliced

1 bell pepper, thinly sliced (red or green)

2 cloves garlic, minced

1 cup provolone cheese, shredded

1/2 cup beef broth

1 tablespoon Worcestershire sauce

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Cook the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions. Drain and set aside.

Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the sliced onion and bell pepper. Sauté for about 5 minutes until they become soft and slightly caramelized. Add minced garlic and cook for 1 more minute. Transfer the veggies to a plate and set aside.

Cook the Steak: In the same skillet, increase the heat to medium-high. Add the thinly sliced steak, season with salt and pepper, and cook for 3-4 minutes or until browned and cooked to your liking.

Combine Ingredients: Return the sautéed vegetables to the skillet with the steak. Pour in the beef broth and Worcestershire sauce, stirring to deglaze the pan, scraping any bits stuck to the bottom. Allow it to simmer for about 3-4 minutes until slightly thickened.

Mix in Tortellini and Cheese: Gently fold in the cooked cheese tortellini and 3/4 cup of shredded provolone cheese into the skillet, mixing until everything is evenly coated. Allow it to heat through for about 2 minutes.

Finish with Cheese: Sprinkle the remaining provolone cheese over the top, reduce the heat to low, and cover the skillet. Let it melt for 2-3 minutes.

Serve and Garnish: Once the cheese is gooey and melted, give it a gentle stir, then serve immediately. Garnish with fresh parsley if desired.
