Ingredients

12 oz cheese tortellini (fresh or frozen)

1 lb thinly sliced ribeye steak

1 medium onion, sliced

1 medium green bell pepper, sliced

2 cloves garlic, minced

3 cups beef broth

1 cup heavy cream

1 ½ cups provolone cheese, shredded

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon Italian seasoning (optional)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper. Sauté for about 5-7 minutes until softened. Add the minced garlic, and cook for an additional 1 minute until fragrant.

Cook the Steak: Push the vegetables to the side of the skillet and add the thinly sliced ribeye steak. Season with salt, pepper, and Italian seasoning (if using). Cook for 3-4 minutes, stirring occasionally, until the steak is browned and cooked to your desired level.

Make the Sauce: Pour in the beef broth and bring to a simmer. Reduce the heat to low and stir in the heavy cream. Allow the sauce to heat through and slightly reduce for about 3-4 minutes.

Add Provolone Cheese: Gradually add the shredded provolone cheese into the skillet, stirring continuously until the cheese melts and the sauce is creamy and smooth.

Combine Tortellini: Add the cooked tortellini to the skillet, tossing gently to coat the pasta with the rich provolone sauce and mix well with the steak and vegetables.

Serve: Remove from heat and let rest for a minute. Taste and adjust seasoning with salt and pepper if necessary.

                - Presentation Tips: Serve the cheesesteak tortellini in deep bowls, garnished with freshly chopped parsley for a pop of color. For an extra touch, sprinkle a little more provolone cheese on top before serving.
