In a mixing bowl, combine the shredded chicken, cream cheese, shredded cheddar cheese, green onions, bell pepper, garlic powder, smoked paprika, salt, and pepper. Mix thoroughly until everything is well incorporated.
Lay a whole wheat tortilla flat on a clean surface. Spoon half of the chicken and cheese mixture onto the center of the tortilla, spreading it evenly.
Fold the sides of the tortilla over the filling, then roll it up from the bottom, tucking in the sides as you go to create a wrap.
Repeat the process with the second tortilla.
Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
Once the oil is hot, place the wraps seam-side down in the skillet. Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and crispy.
Remove from the skillet and let cool for a minute before slicing in half.
Serve warm with optional hot sauce on the side for an extra kick.
