Ingredients

6 large buttery croissants, torn into bite-sized pieces

8 large eggs

2 cups whole milk

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup cooked and crumbled breakfast sausage (or bacon, optional)

1 cup fresh spinach, roughly chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh chives, for garnish

Instructions

Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.

In a large bowl, whisk together the eggs and milk until well combined.

Add garlic powder, onion powder, salt, and pepper to the egg mixture and blend well.

In the prepared baking dish, spread the torn croissant pieces evenly across the bottom.

Sprinkle the cooked sausage (or bacon), fresh spinach, and both kinds of cheese over the croissants.

Pour the egg mixture evenly over the entire casserole, ensuring the croissants are well saturated.

Gently press down with a spatula to help the croissants absorb the liquid.

Allow the casserole to sit for about 10 minutes so the croissants can soak up the mixture.

Bake in the preheated oven for 30-35 minutes, or until the top is golden and the eggs are set.

Remove from the oven and let it cool for 5-10 minutes before slicing.

Garnish with fresh chives before serving.
