Instructions
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the sour cream, cream cheese, garlic powder, onion powder, cumin, salt, and pepper. Mix well until smooth.
Stir in the chopped broccoli, diced bell peppers, sweet corn, black beans, and red onion into the creamy mixture.
In a 9x13 inch baking dish, spread half of the Nacho Cheese Doritos at the bottom.
Pour the veggie mixture evenly over the Doritos in the baking dish.
Sprinkle 1 cup of shredded cheddar cheese over the top of the veggie mixture.
Layer the remaining half of the Doritos on top, followed by the remaining cheddar cheese.
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and the Doritos are golden brown.
Remove from the oven and let it sit for 5 minutes before serving.
Garnish with fresh cilantro if desired before serving.
