Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

4 large flour tortillas

1 cup fresh spinach leaves

1/2 cup diced tomatoes

1/4 cup chopped fresh parsley

1 tablespoon lemon juice

Instructions

Cook the Chicken: Season the chicken breasts with olive oil, garlic powder, onion powder, paprika, salt, and pepper. In a skillet, cook the chicken over medium heat for 6-7 minutes on each side until fully cooked and no longer pink in the center. Remove from heat and let it rest for a few minutes.

Shred the Chicken: Once cooled, shred the chicken using two forks and set aside.

Prepare the Cheese Mixture: In a medium bowl, combine the shredded chicken, mozzarella cheese, cream cheese, lemon juice, and half of the chopped parsley. Mix until well combined.

Assemble the Wraps: Lay one tortilla flat on a clean surface. Place a generous scoop of the chicken and cheese mixture in the center. Top with fresh spinach leaves and diced tomatoes.

Wrap It Up: Fold in the sides of the tortilla and roll tightly from the bottom up to secure the filling inside. Repeat with the remaining tortillas.

Grill the Wraps: Preheat a skillet or grill pan over medium heat. Place the wraps seam-side down and cook for 3-4 minutes on each side, or until golden brown and crispy.

Serve: Slice the wraps in half diagonally and arrange on a platter. Garnish with the remaining chopped parsley.
