Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, cook the ground beef over medium heat until fully browned. Drain excess fat if necessary.
Add the diced onion, chopped bell pepper, and minced garlic to the skillet with the beef. Cook for about 5 minutes until the vegetables are tender.
Stir in the diced tomatoes (with juice), uncooked rice, beef broth, paprika, cumin, salt, and pepper. Mix well.
Remove the skillet from heat and fold in the sour cream and half of the cheddar cheese until well combined.
Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.
Sprinkle the remaining cheddar cheese on top of the casserole.
Cover the dish with aluminum foil and bake for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and slightly golden.
Once done, let it cool for a few minutes, then garnish with fresh parsley before serving.
