Cheesy Sausage and Rice

This one-pot meal combines savory sausage, fluffy rice, and a blend of spices for a hearty dish that's easy to prepare. Perfect for busy nights, it can also be customized with your favorite veggies or made vegetarian.

Ingredients
  

1 lb smoked sausage, sliced (such as kielbasa or andouille)

1 cup long grain rice, rinsed

2 cups chicken broth

1 cup sharp cheddar cheese, grated

1 small onion, diced

1 bell pepper (any color), diced

2 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon salt

1 tablespoon olive oil

1/4 cup green onions, sliced (for garnish)

Optional: 1 cup frozen peas or corn for added veggies

Instructions
 

In a large skillet or pot, heat the olive oil over medium heat. Add the sliced sausage and cook until browned and slightly crispy, about 5-7 minutes.

    Add the diced onion and bell pepper to the skillet. Sauté for another 3-4 minutes, until the vegetables are softened.

      Stir in the minced garlic, paprika, black pepper, and salt. Cook for an additional 1-2 minutes until fragrant.

        Add the rinsed rice to the skillet, stirring to combine it with the sausage and vegetables.

          Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice is tender and has absorbed the liquid.

            If you're adding frozen peas or corn, stir them in during the last 5 minutes of cooking.

              Once the rice is cooked, remove from heat and fold in the grated sharp cheddar cheese until melted and evenly distributed.

                Allow the dish to sit for a few minutes to thicken before serving.

                  Serve warm, garnished with sliced green onions on top for a pop of color.
