1 tablespoon baking powder

1/2 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1 cup cooked breakfast sausage, crumbled

3/4 cup buttermilk

1 tablespoon fresh chives, chopped (optional)

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper until well combined.

      Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.

        Stir in the shredded cheddar cheese and crumbled sausage until evenly distributed throughout the mixture.

          Gradually pour in the buttermilk and mix gently with a spatula until just combined. Be careful not to overmix; a few lumps are okay.

            Turn the dough out onto a floured surface and pat it into a rectangle about 1-inch thick.

              Using a biscuit cutter or a glass, cut out biscuits and place them onto the prepared baking sheet, leaving some space between each one.

                Gather any remaining dough scraps, reform into a rectangle, and cut out additional biscuits until all the dough is used.

                  If desired, brush the tops of the biscuits with a little extra buttermilk for a golden finish.

                    Bake in the preheated oven for 15-20 minutes, or until the biscuits are golden brown on top.

                      Remove from the oven and let cool slightly before serving.
