1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

1 large egg

1 tablespoon melted butter

1/2 cup shredded cheese (cheddar or your choice)

1/4 cup finely chopped green onions

1/4 cup diced bell peppers (red or yellow)

1/4 teaspoon black pepper

Olive oil or vegetable oil for cooking

Instructions
 

In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

    In another bowl, mix the buttermilk, egg, and melted butter until well combined.

      Pour the wet ingredients into the dry ingredients and stir until just combined (a few lumps are okay).

        Fold in the shredded cheese, chopped green onions, diced bell peppers, and black pepper.

          Heat a non-stick skillet over medium heat and add a drizzle of oil.

            Pour about 1/4 cup of the batter onto the skillet for each pancake, cooking until bubbles form on the surface (about 3-4 minutes).

              Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.

                Remove the pancakes and keep warm while cooking the remaining batter (add more oil to the skillet as needed).
