8 egg roll wrappers

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup cherry pie filling

1 egg, beaten (for sealing)

Instructions
 

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.

    Lay an egg roll wrapper flat on a clean surface with one corner pointing toward you.

      Spoon 2 tablespoons of the cream cheese mixture onto the wrapper, then add 1 tablespoon of cherry pie filling on top of the cream cheese.

        Fold the corner closest to you over the filling, then fold in the sides, and roll tightly away from you, sealing the edge with a little beaten egg.

          Repeat the process with the remaining wrappers, cream cheese mixture, and cherry pie filling.

            In a large frying pan, heat about 1 inch of oil over medium heat until hot.

              Carefully place the egg rolls in the hot oil, a few at a time, without overcrowding the pan. Fry for about 3-4 minutes or until golden brown and crispy, turning occasionally for even cooking.

                Remove from oil and place on a paper towel-lined plate to drain excess oil.

                  Dust with powdered sugar before serving for a sweet finish.
