1cupchopped fresh cherries (or frozen if out of season, thawed and drained)
0.5cupchopped walnuts (optional)
1teaspoonvanilla extract
1pinchsalt
0.5cupwhite chocolate chips (for drizzle)
Instructions
Line an 8x8 inch baking dish with parchment paper, allowing some overhang for easy removal later.
In a medium saucepan over low heat, combine the semi-sweet chocolate chips and sweetened condensed milk. Stir continuously until the chocolate is completely melted and smooth.
Remove the saucepan from heat and stir in the vanilla extract and a pinch of salt.
Gently fold in the chopped cherries and walnuts (if using) into the chocolate mixture.
Pour the fudge mixture into the prepared baking dish and press it down evenly using a spatula.
In a small microwave-safe bowl, melt the white chocolate chips in 20-second intervals, stirring between each interval until melted and smooth.
Drizzle the melted white chocolate over the fudge in zig-zag patterns for a decorative touch.
Refrigerate the fudge for at least 3 hours or until firm.
Once set, use the parchment paper overhang to lift the fudge out of the baking dish. Cut into squares.
Notes
Serve the fudge on a beautiful platter, and garnish with extra chopped cherries and walnut pieces on top for an eye-catching finish.
