2 cups cooked chicken, shredded

1 cup frozen mixed vegetables (carrots, peas, corn)

1 medium onion, diced

2 cloves garlic, minced

3 cups chicken broth

1 cup milk

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon onion powder

1/2 teaspoon black pepper

1/4 teaspoon salt

2 cups biscuit mix (like Bisquick)

2/3 cup milk (for dumplings)

Fresh parsley (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the shredded chicken, frozen vegetables, diced onion, minced garlic, chicken broth, milk, thyme, rosemary, onion powder, black pepper, and salt. Stir until well mixed and pour into a greased 9x13-inch casserole dish.

      In a separate bowl, prepare the dumpling batter by combining the biscuit mix and 2/3 cup milk. Mix until just combined; do not overmix.

        Drop spoonfuls of the batter over the top of the chicken mixture in the casserole dish. Make sure to cover as much of the surface as possible.

          Bake in the preheated oven for 30-35 minutes or until the dumplings are fully cooked and golden brown. Check for doneness by inserting a toothpick in the center of the dumplings; it should come out clean.

            Once baked, let the casserole cool for about 5 minutes before serving. Garnish with fresh parsley for a pop of color and flavor.
