2 slices sourdough bread

1 avocado, mashed

1 cup cooked chicken breast, shredded

1/2 cup shredded mozzarella cheese

1/4 cup Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon olive oil

Fresh arugula or spinach (for topping)

Instructions
 

In a small bowl, combine the shredded chicken, Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix until well combined.

    Heat a non-stick skillet over medium heat and add olive oil.

      Spread the mashed avocado on one side of each slice of sourdough bread.

        On the other side of one slice, layer the chicken mixture evenly, then sprinkle with mozzarella cheese.

          Top with a few leaves of fresh arugula or spinach for an added crunch.

            Place the second slice of bread on top, avocado side down.
