2 cups shredded cooked chicken

1 small onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, finely chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for heat)

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

1 package of ready-made empanada dough or pie crusts

1 egg, beaten (for egg wash)

Salt and pepper to taste

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and red bell pepper, cooking for an additional 2-3 minutes until softened.

    Season the Chicken: Add the shredded cooked chicken to the skillet. Sprinkle in the cumin, smoked paprika, and cayenne pepper (if using). Season with salt and pepper to taste. Mix well and cook for another 5 minutes, allowing the flavors to meld. Stir in the chopped cilantro, then remove from heat and let cool.

      Prepare the Dough: If using ready-made empanada dough, roll it out slightly on a floured surface. If using pie crusts, roll out the dough and cut into 4-6 inch circles.

        Fill the Empanadas: Place about 1 tablespoon of the chicken filling in the center of each dough circle. Be careful not to overfill, as this can lead to ruptures during baking. Fold the dough over to create a half-moon shape and seal the edges by crimping with a fork or pinching with your fingers.

          Prepare for Baking: Preheat your oven to 375°F (190°C). Place the empanadas on a parchment-lined baking sheet. Brush the tops with the beaten egg to give them a beautiful golden color while baking.

            Bake the Empanadas: Bake in the preheated oven for 25-30 minutes, or until the empanadas are golden brown and crispy.

              Serve: Allow the empanadas to cool slightly before serving. Enjoy them warm with your favorite dipping sauces, such as salsa or guacamole!
