1 lb ground chicken

1 tablespoon olive oil

1 onion, diced

3 cloves garlic, minced

2 cups chicken broth

1 (14 oz) can crushed tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

8 oz lasagna noodles, broken into pieces

2 cups spinach leaves

1 cup ricotta cheese

1 1/2 cups shredded mozzarella cheese

Salt and pepper to taste

Fresh basil for garnish

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.

    Add minced garlic and ground chicken to the pot. Cook until the chicken is browned and fully cooked, about 6-8 minutes.

      Pour in the chicken broth and crushed tomatoes. Stir to combine.

        Add the dried oregano, dried basil, red pepper flakes, and season with salt and pepper. Bring to a gentle boil.

          Once boiling, add the broken lasagna noodles and cook for about 10-12 minutes, or until pasta is al dente. Stir occasionally to prevent sticking.

            Stir in the spinach leaves and cook for an additional 2-3 minutes until they wilt.

              Reduce the heat to low. Stir in the ricotta cheese and half of the mozzarella cheese until melted and well incorporated.

                Serve the soup hot, topped with the remaining mozzarella cheese and fresh basil for garnish.
