1 lb boneless, skinless chicken breast

4 cups chicken broth

1 cup water

1 cup cooked rice (preferably jasmine or basmati)

2 lemons (zest and juice)

2 garlic cloves, minced

1 small onion, diced

2 carrots, sliced

2 celery stalks, diced

1 tablespoon olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic, sliced carrots, and diced celery to the pot. Sauté for another 5 minutes until the vegetables start to soften.

      Pour in the chicken broth and water, stirring to combine. Bring the mixture to a gentle boil.

        Season the broth with dried thyme, salt, and pepper.

          Carefully add the chicken breasts to the boiling broth. Reduce the heat to medium-low and let simmer for about 15-20 minutes, until the chicken is fully cooked.

            Once the chicken is cooked, remove it from the pot and shred it using two forks. Return the shredded chicken to the pot.

              Stir in the cooked rice, lemon zest, and lemon juice, simmering for an additional 5 minutes to allow the flavors to meld.

                Taste and adjust the seasoning with additional salt, pepper, or lemon juice if desired.

                  Serve the soup hot, garnished with fresh chopped parsley for a vibrant finish.
