Chicken Noodle Soup RECIPE

1 lb boneless, skinless chicken thighs

8 cups low-sodium chicken broth

2 cups egg noodles

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, sliced

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Stir in the minced garlic, cooking for an additional minute until fragrant.

      Add the sliced carrots and celery to the pot, cooking for another 5 minutes until slightly softened.

        Season the vegetables with dried thyme, oregano, salt, and pepper. Mix well to combine.

          Pour the chicken broth into the pot and bring the mixture to a boil.

            Once boiling, add the chicken thighs and bay leaf. Reduce heat to a simmer and cover the pot. Cook for 15-20 minutes until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

              Using tongs, carefully remove the chicken from the pot. Shred the chicken into bite-sized pieces and return to the soup.

                Stir in the egg noodles and continue simmering for another 8-10 minutes, until the noodles are cooked and tender.

                  Taste the soup and adjust seasoning if needed. Remove the bay leaf before serving.

                    Ladle the soup into bowls, garnish with fresh parsley, and serve with lemon wedges on the side for a zesty kick.
