2 cups shredded cooked chicken

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1/2 cup marinara sauce, plus more for serving

1 teaspoon dried oregano

1/2 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 package (16 oz) puff pastry sheets, thawed

1 egg, beaten (for egg wash)

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, combine the shredded cooked chicken, ricotta, mozzarella, Parmesan, marinara sauce, oregano, garlic powder, red pepper flakes, salt, and pepper. Mix until well combined.

      Roll out the puff pastry sheets on a lightly floured surface to smooth out any creases. Cut each sheet into 4 equal squares.

        Place a generous tablespoon of the chicken mixture in the center of each pastry square.

          Fold the corners of the pastry square over the filling to create a pillow shape and pinch the edges to seal. Use a fork to crimp the edges for extra sealing.

            Transfer the pillows to the prepared baking sheet. Brush the tops with the beaten egg to give them a golden-brown finish.

              Bake in the preheated oven for 20-25 minutes, or until the pillows are puffed up and golden brown.

                While the pillows are baking, warm up the additional marinara sauce on the stove for serving.

                  Once done, remove from the oven and allow the pillows to cool for a few minutes.

                    Serve warm, drizzled with marinara sauce and garnished with fresh basil leaves.
