2 cups cooked chicken, shredded

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup green onions, finely chopped

1/4 cup red bell pepper, finely diced

1 egg, beaten

2 tablespoons mayonnaise

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper, to taste

Olive oil, for frying

In a large mixing bowl, combine the shredded chicken, breadcrumbs, grated Parmesan cheese, chopped green onions, and diced red bell pepper.

    In a separate small bowl, whisk together the beaten egg, mayonnaise, garlic powder, onion powder, salt, and black pepper.

      Pour the wet mixture into the chicken mixture and stir until well combined. The mixture should be moist but still hold together; if it's too dry, add a little more mayonnaise.

        Form the mixture into small patties, about 2-3 inches in diameter. You should be able to make about 10-12 patties, depending on the size.

          Heat olive oil in a large skillet over medium heat. Once hot, gently add the patties to the skillet, ensuring not to overcrowd the pan.

            Cook the patties for about 4-5 minutes on each side or until they turn golden brown and crispy. You may need to adjust the heat to prevent burning.

              Remove the patties from the skillet and place them on a paper towel to drain excess oil.

                Serve warm with your favorite dipping sauce, like sweet chili or garlic aioli.
