3 cups cooked chicken, shredded

8 corn tortillas, cut into wedges

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) diced tomatoes with green chilies

1 cup corn (fresh, frozen, or canned)

2 cups shredded cheddar cheese

1 cup sour cream

1 tablespoon taco seasoning

1/2 teaspoon garlic powder

1/2 teaspoon cumin

Fresh cilantro, chopped (for garnish)

Jalapeño slices (optional, for topping)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the shredded chicken, black beans, diced tomatoes (with their juices), corn, sour cream, taco seasoning, garlic powder, and cumin. Mix well until all ingredients are evenly incorporated.

      In a greased 9x13 inch casserole dish, arrange half of the tortilla wedges at the bottom, overlapping slightly.

        Spread half of the chicken mixture over the tortillas and sprinkle with half of the cheddar cheese.

          Repeat the layers with the remaining tortilla wedges, chicken mixture, and top with the remaining cheddar cheese.

            Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes.

              After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

                Once out of the oven, let the casserole sit for 5 minutes. Garnish with fresh cilantro and jalapeño slices if desired.

                  Serve hot and enjoy!
