Ingredients

1 cup all-purpose flour

1 cup cornmeal

1 tablespoon baking powder

1 tablespoon sugar

1/2 teaspoon salt

1 cup buttermilk

1 large egg

1 cup shredded cheddar cheese

1 can (15 oz) chili (without beans)

8 hot dogs

Wooden skewers or popsicle sticks

Oil for frying

Instructions

Begin by preheating your oil in a deep fryer or a heavy-bottomed pot to 350°F (175°C).

In a mixing bowl, whisk together the flour, cornmeal, baking powder, sugar, and salt until evenly combined.

In a separate bowl, mix together the buttermilk and egg until smooth.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.

Fold in the shredded cheddar cheese until evenly distributed in the batter.

Prepare the hot dogs by inserting a wooden skewer into each one, ensuring it goes through almost to the other end for a solid grip.

Dip each hot dog into the batter, making sure it's fully coated. Allow any excess batter to drip off.

Carefully place the battered hot dogs into the preheated oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes or until they are golden brown and crispy.

Remove the corn dogs with a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.

Heat the chili in a saucepan over medium heat until warmed through, stirring occasionally.

Serve each corn dog hot with a generous drizzle of chili over the top and a sprinkle of extra cheddar cheese.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 8 corn dogs

                          - Presentation Tips: Serve the chili cheese corn dogs on a long platter, garnished with jalapeño slices and a sprinkle of fresh parsley or green onions. Consider pairing with a side of mustard or ranch dipping sauce for added flavor!
