1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1/2 cup all-purpose flour

1/4 cup cornstarch

2 large eggs, beaten

1 cup vegetable oil (for frying)

1/2 cup fresh lemon juice

Zest of 1 lemon

3 tablespoons soy sauce

3 tablespoons honey

2 cloves garlic, minced

1 teaspoon ginger, grated

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (optional)

Sliced green onions (for garnish)

Lemon slices (for garnish)

Instructions
 

In a bowl, combine the flour and cornstarch. Season with a pinch of salt and pepper.

    Dip the chicken pieces into the beaten eggs, ensuring they are fully coated.

      Dredge the egg-coated chicken into the flour and cornstarch mixture, shaking off any excess.

        Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken pieces in batches and fry until golden brown and cooked through, about 4-5 minutes per batch. Remove and drain on paper towels.

          In a separate bowl, whisk together the lemon juice, lemon zest, soy sauce, honey, minced garlic, ginger, sesame oil, and red pepper flakes, if using.

            In the same skillet, after removing excess oil, pour in the sauce mixture and simmer over medium heat for about 3-4 minutes until slightly thickened.

              Add the fried chicken back to the skillet and toss to coat evenly in the sauce. Cook for an additional 2 minutes to heat through.

                Remove from heat and transfer to a serving platter.
