2 cups rotini pasta

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 cup corn, fresh or canned

1 avocado, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced (optional for extra heat)

1 cup cilantro, chopped

1/3 cup sour cream

1/4 cup mayonnaise

2 tablespoons chipotle sauce or adobo sauce from chipotle peppers

2 tablespoons lime juice

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente (usually about 8-10 minutes). Drain and rinse under cold water to stop cooking. Set aside.

    Prepare the Dressing: In a bowl, mix together the sour cream, mayonnaise, chipotle sauce, lime juice, salt, and pepper until smooth and well combined. Adjust the spice level by adding more chipotle sauce if desired.

      Combine Ingredients: In a large mixing bowl, combine the cooked pasta, black beans, cherry tomatoes, corn, avocado, red bell pepper, red onion, jalapeño (if using), and cilantro.

        Add the Dressing: Pour the prepared dressing over the pasta and vegetables. Gently toss everything together until well coated and evenly mixed.

          Chill: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.

            Serve: Toss the salad again before serving and adjust seasoning with additional salt and pepper if needed.
