3 large eggs, separated

1 tablespoon vanilla extract

1 cup heavy whipping cream

Instructions
 

Melt the Chocolate: In a heatproof bowl, combine the chopped dark chocolate and place it over a saucepan of simmering water (double boiler method). Stir until the chocolate is completely melted and smooth. Remove from heat and let cool slightly.

    Prepare Egg Yolks: In a medium bowl, whisk the egg yolks with 2 tablespoons of sugar and vanilla extract until the mixture is light and creamy. Gradually add the melted chocolate into the yolk mixture, stirring continuously to combine.

      Beat Egg Whites: In another clean, dry bowl, beat the egg whites and a pinch of salt with an electric mixer until they form stiff peaks. Gradually add the remaining 2 tablespoons of sugar and continue to whip until glossy.

        Whip Cream: In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip – stop when it’s fluffy and still pourable.

          Combine Mixtures: Gently fold the whipped cream into the chocolate mixture until fully incorporated. Then, carefully fold in the beaten egg whites in two additions, ensuring to maintain as much air as possible for a light and airy mousse.
