½ cup granulated sugar

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon (plus extra for coating)

1 large egg

½ cup milk

¼ cup unsalted butter, melted

1 teaspoon vanilla extract

½ cup brown sugar (lightly packed)

½ cup granulated sugar (for coating)

½ teaspoon ground nutmeg (optional, for extra flavor)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a muffin tin with non-stick spray or line it with paper liners.

    In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and nutmeg (if using).

      In a separate bowl, mix the egg, milk, melted butter, and vanilla extract until well combined.

        Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; it's okay if a few lumps remain.

          Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.

            Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center comes out clean.

              While the muffins are baking, prepare the cinnamon sugar coating. In a shallow dish, mix the granulated sugar and 1 teaspoon of cinnamon together.

                Once the muffins are done, remove them from the oven and let them cool in the tin for 5 minutes. Then, carefully remove them from the tin and transfer them to a wire rack.

                  Coat the muffins in the cinnamon sugar mixture while they are still warm, ensuring they are fully covered.
