4 cups mixed greens (romaine, spinach, arugula)

2 eggs, hard-boiled and sliced

1 cup cooked chicken breast, diced (grilled or rotisserie)

6 strips of crispy bacon, crumbled

1 avocado, diced

1 cup cherry tomatoes, halved

1/2 cup blue cheese, crumbled

1/4 cup red onion, thinly sliced

1/4 cup olive oil

2 tablespoons red wine vinegar (or apple cider vinegar)

1 teaspoon Dijon mustard

Salt and pepper to taste

Instructions
 

Begin by preparing the dressing: In a small bowl, whisk together the olive oil, vinegar, Dijon mustard, salt, and pepper until well combined. Set aside.

    In a large salad bowl or platter, layer the mixed greens evenly across the bottom.

      Neatly arrange the sliced hard-boiled eggs, diced chicken, crumbled bacon, diced avocado, cherry tomato halves, blue cheese, and red onion on top of the greens in sections, creating a colorful striped pattern.
