Ingredients

200g dark chocolate (70% cocoa), chopped

3 tablespoons unsalted butter

3 large eggs, separated

1/3 cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy cream

Pinch of salt

Instructions

In a heat-proof bowl, combine the chopped dark chocolate and unsalted butter. Place the bowl over a pot of simmering water, creating a double boiler. Stir until melted and smooth. Remove from heat and let cool slightly.

In a separate medium bowl, whisk the egg yolks with half of the granulated sugar (about 2 tablespoons) until pale and creamy. Add the melted chocolate mixture and vanilla extract, whisking until combined.

In another clean bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture in two additions, being careful not to deflate the cream.

In a clean, dry bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar while continuing to beat until glossy stiff peaks form.

Gently fold the egg whites into the chocolate mixture in two additions until just combined. Be careful to maintain airiness.

Spoon the mousse mixture into individual serving glasses or bowls and refrigerate for at least 2 hours, or until set.

              Prep Time: 20 minutes | Total Time: 2 hours 20 minutes | Servings: 4

                - Presentation Tips: Serve the mousse chilled, topped with a dollop of whipped cream and grated chocolate or fresh berries for an elegant touch.
